Branzino

Part of our sister hotel, Le Meridien, the restaurant Branzino, located across the street from the Chateau Versailles at the corner of Sherbrooke and St-Mathieu Streets, offers a gourmet cuisine with a Mediterranean inspiration. Branzino provides room service for guests of Chateau Versailles, and is also an excellent choice to dine-in or have a drink. The restaurant can accommodate up to 100 guests for a seated event and up to 140 guests for a cocktail dinatoire, in a chic and warm decor. The Branzino also offers a private room, for any groups of 12 guest maximum, allowing them to admire the wine cellar.

The restaurant is owned by Bill Kyres, businessman who has been working in food and restaurant industries for the past 30 years. The executive chef, Alexandre St-Amand-Tremblay, graduated from the Advanced Culinary Arts of l’Institut de Tourisme et d’Hôtellerie du Québec (ITHQ). While studying, he worked at the Bastide de Capelongue, a two Michelin stars restaurant in Provence, and was also the recipient of the well-known Françoise Kayler grant that recognize new talents in the food and restaurant industries. Once he started to work, Alexandre gained in experience by working at Joe Beef as well as by being the sous-chef at Aurochs, well-known steakhouse at Dix30.
